Smoothies

Smoothies make a great breakfast or can be used as a dessert. Make it nice and thick and serve it with a spoon as a sorbet replacement.  (Wheat and gluten free, dairy free using coconut milk only and deleting the optional whey powder, corn, soy and egg free, sugar free)

  • 1 small banana
  • 1 cup frozen organic fruit of your choice or ½ cup each of two different frozen fruits
  • 2/3 cup organic whole coconut milk or plain whole organic kefir or plain whole organic yogurt; or 1/3 cup coconut milk and 1/3 cup kefir or yogurt
  • Handful of chopped nuts and seeds, like walnuts, almonds, and pumpkin seeds

Put everything but the nuts and seeds into a blender and blend until smooth. Pour into a glass and sprinkle nuts and seeds on top.

TIPS:

Quantities are approximate – use your own combinations and use more or less ingredients to taste.

If you want to use protein powder, avoid soy powders. A more absorbable protein powder is whey. If you use yogurt or kefir, you’ll be getting protein. The addition of nuts will also provide protein. 

Always use a banana or apple to sweeten the smoothie. 

If using fresh fruit, add ice cubes to help freeze the smoothie.

Combination ideas:

  • Peach and cherry with banana
  • Strawberry with banana
  • Blueberry with apple
  • 1 cup fresh organic pineapple with banana
  • Mixed berries with banana and apple
  • Mango with banana
